In addition to being a virtuoso of Spanish-Japanese fusion cooking, Chef Pepe Moncayo is a loving father and husband. He is the proprietor and head chef of BAM!, a restaurant showcasing his inventive and imaginative use of sake in the kitchen. Moncayo’s upbringing in his native Spain, where he was surrounded by food and family, laid the groundwork for his eventual success as a chef and restaurateur.
His grandmother taught him the fundamentals of cooking, showing him how to prepare classic meals using in-season, fresh products. Pepe’s global trips also sparked his interest in and respect for many foods and civilizations, particularly Japanese ones. His meals highlight the harmony and contrast between the two cuisines, and he characterizes them as “fun, playful, and surprising.”
In addition, he gives careful consideration to the appearance and atmosphere of his restaurant, which he created to be warm, welcoming, and informal. Chef Moncayo derives most of his inspiration and encouragement from his family. He got married in Singapore to Aishah, and the couple had an unnamed son.
For Moncayo, Singapore will always be home. He adores the city’s opportunities, excitement, and variety. They opened Cranes Spanish Kaiseki in 2018, moving to Washington, DC, with their children. The restaurant was awarded a Michelin star in 2020.
Jiwa Singapura, their second eatery, debuted in 2023 and showcased their passion for Singaporean food. As the group’s director of service and general manager of Jiwa, Aishah makes sure each visitor has an amazing time.
